In 2018 after years of organizing his thoughts and crafting his vision Chef Travis Limoge decided it was time to make the move to the country and state that had inspired him for so many years, he landed on the coast of Oaxaca in Puerto Escondido.

With his first solo project, PIRATA, he showcases his love for the regions cuisine and pushes the boundaries of what it can become, while turning up the volume on the conversation about the importance of ethical practices in food systems and paying respect to the land and ocean which share with us their bounty.

Travis’ goal is to pay homage to the country that welcomed him with open arms and the people who shared with him the ancestral knowledge of their culture and cuisine.
