Steven Tuttle is Beverage Director at SDCM, the creative brain trust behind several of San Diego’s most popular venues, including Kettner Exchange, The Grass Skirt, FIREHOUSE American Eatery + Lounge and Vin De Syrah in San Diego. He was trained under New York greats Sam Ross (Milk & Honey / Attaboy) and Phil Ward (Death & Company / Mayahuel). In San Diego, Steven worked at Craft & Commerce during the time it was named one of the Top 50 Bars in the US by Food & Wine magazine, as well as nominated at Tales of the Cocktail for best High Volume Bar. He has been a featured bartender at the Food & Wine Classic, is a regular EATER “Bartender of the Year” award winner and currently holds a National Restaurant Association “Star of the Bar” title. His unexpected cocktail menus are inspired by his work with these cocktail powerhouses—Tuttle is endlessly creative and believes cocktails should be fun, and escapist—and he’s a master of two spirits in particular: rum and mezcal. For example, his ‘Casa de Tiki’ cocktail, which won him the “Star of the Bar” title and is a play on his best-selling cocktail for Kettner Exchange, ‘The Tiki Cross,’ features Casamigos tequila, mezcal, pineapple juice, lime juice, orgeat, falernum, curaçao, and black walnut bitters; garnished with pineapple and nutmeg. Steven has done everything from aging mezcal in a huge formal bourbon barrel, only to “season” it for later rum drink, to pushing the limits of the Bloody Mary using both mezcal and tequila.
