
Giannina Gavaldón

Chef Giannina Gavaldón initiated her culinary studies at CSCA Le Cordon Bleu in Los Angeles. Starting in 2007, Giannina found her passion for Mexican culture, specifically for the quality fish, seafood, vegetables, wine, and cheese of Ensenada. This was the main reason why she selected her internship on different places around this port: Hotel Punta Morro, Restaurants Manzanilla and Muelle Tres.
In 2010 she had the opportunity to work at the Cannes Film Festival, in charge of private dinners for directors and artists traveling from around the world. Thanks to this experience, she became the Executive Chef at Bistro in Monte Xanic, Valle de Guadalupe where she offered a different menu each weekend, each built on fresh products from the region. In June, 2014, she opened the doors of Olivia el Asador del Porvenir, where her guests could delight in the best local ingredients and wines amidst the beautiful outdoors of the Valle de Guadalupe.
