Carlos was born in Sonora, but quickly acclimated to Baja California Sur. He is a Civil Engineer but never practiced. He began as a cook in several restaurants that he opened in Obregón, after which he spent a time importing seafood from Alaska and distributing it in Mexico City. However, he was truly passionate about grilling. He directed his attention toward La Paz, B.C.S. where his product lives, his bay, his suns. They influenced his culinary perspective. Today he is in love with the region as he awaits the arrival of local seafood every day. He cooks over an open fire in Baja California Sur and tastes wine and more wine. Another one of his grand passions is the study of wine and its regions. Between cooking and contributing towards the rescue of the bay of La Paz, he enjoys his restaurant Tatanka in La Paz, B.C.S. and Ensenada.
